Ingredient
Full front hock serves 4-5
4 5 eggs
Normal black vinegar 350ml
Sweet black vinegar 350ml
Brown sugar 3 tbsps
Young ginger big knob maybe 1/3 big ginger
Old ginger same size
Red date
Shao Xing wine 3 tbsps
Sesame oil 2tbps
Soak red date in wine at least 1 hour
Blanch trotter until clean
Fry gingers with sesame oil
Throw pork and fry together add sugar and fry until sugar melt
Add water enough to cover and low boil 30min
Add all the vinegar and remaining sugar and boil 2.5 hour on very low flame
Taste adjust.. Can add pinch salt
Eggs pre cook and add in later maybe last 30min
