Red chilli
Mince 500g
Sauce
Oyster sauce
Spicy bean paste
Dark soy
Sugar 1 teaspoon
Shaoxing
Water half cup
Fry meat with aromatics and spring onion root
Add eggplant
Add water
Slow simmer until soft
Add corn slurry to thicken
Garnish with spring onion and coriander leaf.
